José Michel ‘Special Club’ Champagne, 2015 – $85
From the Montagne de Reims in Champagne, this golden-hued beauty offers delicate, lively bubbles and an aromatic complexity that exudes finesse. Notes of rose, hazelnut, and almond mingle with hints of toasted bread, stewed yellow-fleshed fruit, and a subtle floral touch. Generous and unctuous, it’s a Champagne made for haute cuisine.
As Wine Director Troy Revell shares, “This is a Special Club bottling, meaning it’s only produced in the finest vintages from a Grower Champagne house that owns their own vineyards. Even at 10 years of age, this is still quite young and will age for as long as you can resist opening it. The bottle I tried was still adding complexities a few hours after opening. Compared to the exclusive bottlings from the big name brands of the region, Special Club Champagnes still offer terrific value and should be sought out whenever available!”

Maya Dalla Valle: Shaping the Next Generation of Napa Valley Winemaking
“Dalla Valle is my home. It is also my family’s legacy.” Maya’s story goes deeper than winemaking. As the second-generation leader of Dalla Valle Vineyards, Maya has combined world-class training — with degrees from Cornell and Bordeaux Science Agro and hands-on experience at Pétrus and Château Latour — with a lifetime steeped in Napa Valley’s culture of excellence.
Since taking on the role of director in 2021, Maya has brought more than her family heritage. She holds a master’s degrees from Cornell and Bordeaux Science Agro, and honed her skills at Pétrus, Château Latour, and other world-class estates. It’s no surprise she’s been named one of Wine Enthusiast’s “Top 40 Under 40 Tastemakers” and recognized by Wine Spectator as “A Winemaker to Watch.”
In this inaugural episode of The Wine Centric Show filmed inside Fearrington’s wine cellar, Maya talks candidly about leading alongside her mother, balancing family and winemaking, and carrying Napa’s legacy forward.
