Fall has officially arrived at The Fearrington House Restaurant, and Chef Paul Gagne’s new seasonal menu captures the very best of the season’s bounty. Rooted in French technique and inspired by our region’s farms, each dish balances comfort, creativity, and refinement — the flavors of autumn brought beautifully to life.
One of our favorites this season is the Aged Rohan Duck with Flageolet Cassoulet, Beetroot, Pearl Onions and Collards — an elegant expression of fall’s heartier notes. The richness of the duck pairs perfectly with the earthiness of collards and the subtle sweetness of beetroot, all tied together with Chef Gagne’s thoughtful layering of flavors.
