On May 16, The Fearrington House Restaurant will be hosting winemaker François Servin from Domaine Servin, one of Chablis’ leading estate owned producers. The evening will feature five exquisite wines paired with Executive Chef Colin Bedford’s menu gearing towards the fresher and lighter flavors of the Spring/Summer season.
Domaine Servin traces its winemaking traditions back to 1654, with seven generations of vignerons producing quality white wines from Burgundy, France. The domaine owns over 30 hectares of vineyards, including well-situated parcels in the premier cru sites of Montée de Tonnerre, Vaillons, Butteaux, Vaucoupin, and Monts de Milieu, as well as four of the seven Grand Cru vineyards of Chablis – Les Preuses, Bougros, Blanchots, and Les Clos. All of François’ vineyards are situated on Kimmeridgian limestone soils, which give his wines an incomparable depth of minerality and intensity.
With his wines described as complex, powerful and perfectly balanced, fans of white Burgundies, cool climate Chardonnays, and nuanced wines will appreciate each of Domaine Servin’s classic and age-worthy gems.
From March 1 - 29 we are offering this dinner for $195 per person, including a wine reception, dinner menu with wine pairings, service fees, and tax.
After March 29, $250 per person.
